2. Ingredients for Easy Gluten-Free Mac and Cheese

  • nonstick cooking spray
  • 12oz. sharp cheddar cheese, grated and divided
  • 2oz. cream cheese, cut into ¼” cubes
  • 1 lb. short-cut gluten free pasta
  • 2 Tbs. (28g) unsalted butter
  • 6 cups whole milk, divided
  • 1 tsp. salt
  • whole milk
  • ½ cup heavy cream
  • ½ tsp. mustard powder
  • salt
  • ¼ tsp. white or black pepper

3. Directions:

  1. Spray a 9×13-inch baking dish with cooking spray. Set aside.
  2. Using a cheese grater or food processor fitted with a grating attachment, grate the Cheddar cheese. Set aside.
  3. Cut the cream cheese into 1/2 inch cubes. Set aside.
  4. Place the elbow macaroni, milk, butter, and salt in a large pot. Cover the pot with a fitted lid. Set the pot over medium-high heat and bring to a boil. Once boiling, immediately reduce the heat to medium-low so that the mixture is at a low boil.
  5. Preheat the oven to 375°F.
  6. Cook the pasta, stirring occasionally, until it has absorbed most of the liquid, about 10 minutes.
  7. Turn off the heat and remove the lid from the pot. Add the cream cheese to the noodles and stir.
  8. Add the remaining milk, heavy cream, mustard powder, salt, and pepper to the pot. Stir to combine.
  9. Add 2/3 of the cheddar cheese to the pot. Stir until the cheese is melted into the sauce.
  10. Pour the mixture into the prepared baking dish, then sprinkle remaining cheese in an even layer on top.
  11. Bake the mac and cheese on middle rack of oven until bubbling at edges and the top is lightly browned, 22-25 minutes.
  12. Check to see that dish is done. Remove from oven or add time as needed.
  13. Allow macaroni and cheese to rest for 15-20 minutes before serving.

Day 79: I love this recipe because it’s simple to put together, I usually have all the ingredients on hand, and it can be used just as a typical mac n cheese sauce. You can also up the sophistication level a notch by using it for gluten free baked macaroni and cheese. It’s very versatile so you can change out the cheeses, spices, make it thick or more like a thin Kraft mac n cheese sauce, or even sneak in some veggies (puree some cooked carrots and throw them in, no one will ever know).

Quick & Easy Gluten Free Macaroni & Cheese Sauce Recipe
  • 8 oz cooked GF pasta shells, elbows, or spirals
  • ¼ cup butter
  • ¼ cup white rice flour
  • 1 teaspoon salt
  • 1½ teaspoon ground mustard
  • ¼ teaspoon ground pepper
  • 2-3 cups milk (whole milk works best)
  • 2-3 cups desired cheeses, shredded. I prefer a blend of cheddars.
  • ½ cup crushed cereal such as GF Rice Krispies, Corn Chex, or GF corn flakes (for baked mac n cheese version)
  • 3 tablespoon butter melted (for baked mac n cheese version)

Easy Gluten Free Mac And Cheese Recipe Baked

  1. If you're going to make this into baked mac n cheese (not pictured above), preheat oven to 375 degrees.
  2. In 2 quart sauce pan over medium heat, melt butter. Whisk in rice flour, salt, ground mustard, and pepper. Cook and stir for 1 minute.
  3. Whisk in the milk making sure there are no lumps. 2 cups of milk will make a very thick sauce and 3 cups of milk will make a fairly thin sauce. I used 2 cups in the picture above.
  4. Cook, stirring constantly, until sauce thickens and boils. Remove from heat.
  5. Stir in cheeses until thoroughly melted.
  6. Combine with macaroni. At this point you're ready to serve & eat if you'd like!
  7. If baking: Pour into 8 x 8' square baking dish. Combine crushed cereal and melted butter in small bowl and sprinkle over macaroni. At this point I also sprinkle a little paprika over the top but that's totally optional.
  8. Bake 20-30 minutes until bubbling and topping is golden brown. Let cool 5 minutes before serving.
